Day 286 - Cinnamon Sugar Palmiers

Yes, I did.
At least I feel like I cheated.
I did bake today and this is a recipe I haven't made yet, but it isn't from scratch.
I have always, ok, not really always, just since I've started this blog always, wanted to bake something with puff pastry.

I'm sure it isn't difficult to make puff pastry from scratch, it's probably just time consuming.
It probably tastes much better than the store bought stuff, too.
Aw, now I really am wishing I had made it from scratch.
It was good, but you know nothing beats something that's homemade.
I saw palmiers, aka elephant ears, on Joy The Baker and they looked so easy that, "even a caveman could do it".
Easy peasy, especially if the pastry dough isn't homemade.  ;-)

Cinnamon Sugar Palmiers - hmmmm...I completely forgot to count how many I made  and since we've eaten quite a few of them I can't even guess.  Alright, it was probably about 18 or so.

1 sheet puff pastry, thawed
1 cup sugar
2 teaspoons cinnamon


Preheat oven to 400 degrees F.
Prepare a cookie sheet by lining it with parchment paper.
In a small bowl, mix sugar and cinnamon together.
On a clean surface, sprinkle half of the cinnamon/sugar mixture.
Gently unroll the pastry sheet over the sugar.


It's ok if there's a tear, just use a dab of water and piece it back together.
Sprinkle the remaining sugar mixture entirely over the dough.


With a rolling pin, roll the dough out so that it is about 1/2-1 inch longer on all sides so that it is approximately 10 X 12-inches.


Beginning with one of the longer sides, gently roll it towards the middle, stopping in the center of the dough.



Do the same with the other side, rolling into the center.



Gently press the two rolls together.
Wrap in plastic wrap, place on a cookie sheet and refrigerate for an hour until firm.


Remove from refrigerator and using a sharp knife, cut dough into 1/2 inch-thick slices and place on prepared cookie sheet about 1-2 inches apart.


Bake for 6 minutes, rotate the cookie sheet and then bake for another 6-8 minutes until golden.



You will have quite a bit of sugar mixture left over, so you may not want to use a whole cup, but you can make good use of what's left on the counter when the dough is in the fridge.

I used to draw that little guy all the time on my notebooks in junior high.  Just had an urge to draw him again.

So much fun, and what a great stress reliever!

Reminded me of this video my aunt sent me a few years ago.



That woman is SO very talented.  What a gift she has, such beautiful work.  All in sand!
I could never do that.  I hate sand.
No. really.  I hate it.  It makes me shudder.
Anyway.

I rate everything I bake on a scale of 1-4 with 4 being the best and these Cinnamon Sugar Palmiers (Elephant Ears) earned 3 1/2 rolling pins.
They were quite yummy and I loved the flaky dough. 
One day I'll have to make the dough from scratch just to see what the difference in taste would be.  I'm sure it doesn't even compare.

  2. These look AMAZING! I can't imagine it would make that much difference to make the dough from scratch, so I think the cheating is just smart baking. I can imagine how fun it must be to slice that dough into those cute shapes.

  6. Yes....it's 1:26 AM EST....and I'm fixin' to make these. Had to bring the recipe back up from my Pinterest to remember how much cinnamon and sugar to mix up. Will slice and bake them later this morning. Thanks for sharing this "cheater" recipe with us...it's nice to have one when your hands hurt all the time for nasty arthritis.

  9. Take that leftover cinnamon sugar and sprinkle it onto flour tortillas and bake in the oven just till the tortillas get slightly golden. Yummmm.....
