That's not easy to say, Triple Chocolate Toffee Caramel Cookies.
I keep wanting to stick the word coffee in there.
So when a daughter is away at college, the mommy wants to send her a care package to remind her that she's loved, and very much missed or rather missed and very much loved.
And of course, when sending said care package the mommy must include some homemade cookies.
None of that packaged stuff for my kid.
She wants the real stuff. The homemade goodies with that taste of love inside.
But I don't know if sending homemade goodies are a tease.
I mean, she knows that I make, create and we eat.
And the eating part is one of the best things about this food blogging deal.
I remember when our oldest daughter went off to college a couple years ago, one of the things she missed most about home was...wait for it...yes, momma's cooking and that was about 4 months before I started my 365 day challenge.
I hate to toot my own horn, but since those early days in the beginning of our marriage, I've come a LLOOOONNNNNG way from canned vegetables and frozen boxed turkey breast.

Not that it's not good if other people choose to eat it, I just can't imagine serving that again after all I've learned.

To be honest, I really don't remember what else Mr. 365 and I used to eat besides that one 10 pm jaunt to Wendy's pre-kids just because we were hungry.
Ah, those were the days.
So, I have to say I'm MUCH happier for myself, but more importantly for our family that I've learned to cook, bake and do all things kitchen.
Alright, well maybe not all things kitchen 'cause I don't know how to do anything mechanical and I'm not gonna be undoing the sink u pipe. (Pretty impressed I even knew the sink has a u pipe, aren't 'cha? - yeah, well, I ain't changing it. That grosses me out.)
Once again, I get sidetracked. I started talking about sending cookies in a care package and finish it off talking about a clogged kitchen sink.

Triple Chocolate Toffee Caramel Cookies - makes about 4 dozen cookies
Ingredients
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter
1/2 cup granulated sugar
3/4 cup packed light brown sugar
1 teaspoon vanilla
2 eggs
1/2 cup dark chocolate chips
1/3 cup white chocolate chips
1/3 cup semi-sweet chocolate chips
1/2 cup toffee bits
1 1/3 cups wrapped caramels, cut in quarters, about 15
Directions
Preheat oven to 375 degrees F.
Prepare a baking sheet or two with parchment paper, so that the cookies don't stick. When the caramels melt, they will stick to the pan.
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
In a mixing bowl fitted with the paddle attachment, cream together butter and sugars.
Add vanilla.
Add eggs, one at a time, mixing thoroughly before incorporating the second.
Gradually add flour mixture., scraping the sides of the bowl if necessary.
Mix in chocolate chips, toffee bits and caramels.
Place rounded tablespoonfuls onto cookie sheets.
Bake for 8-10 minutes, until lightly golden.
Allow to cool on cookie sheets about 5-7 minutes before removing to a wire rack.

I rate everything I make on a scale of 1-4 with 4 being the best and these Triple Chocolate Toffee Caramel Cookies earned 3 1/2 rolling pins.
Don't worry, I sent plenty off to my daughter before the masses here could get their mitts on them.
She had more than plenty to share with her roommate and some floor mates.
Nothing like a care package from home, especially when it is packed with some freshly baked cookies.
It may be time to send some cookies again very soon.

There is no way I am going near a U pipe either. On the other hand, I would love to get a care package filled with these awesome cookies!! Love that they have huge chunks of caramel in them!!!

ReplyDeleteOh my gosh!! These look so good, and I love the pix. I remember the days of eating a burger at 10pm...Shoot if I did that now I would wake up 20 lbs heavier.
