Day 309 - Sweet Potato Crisps


Tonight I made Sweet Potato Crisps.
Short, but sweet.
Ok, not really sweet as in brown sugar sweet, but more like savory.

Sweet Potato Crisps - makes about 25

2 large sweet potatoes (about 1 pound)
1/2 cup Parmesan cheese
2 egg whites
1 teaspoon freshly chopped rosemary
1/2 teaspoon freshly ground pepper

Preheat oven to 425 degrees F.
Prepare a baking sheet by lining it with parchment paper.
Finely shred potatoes using a food processor (or grater).
Line a cookie sheet with a dish towel and place shredded potatoes in a single layer on top.


Cover potatoes with another dish towel.  Um, yeah, use clean dish towels.
I used towels because I wasn't sure how many paper towels I'd use.  I did go through 4 towels.
You want to squeeze out as much water as possible from the potatoes so that they will be crispy.


In a large bowl, combine Parmesan cheese, egg whites, rosemary, ground pepper and shredded potatoes.
Mix well.


Using a tablespoonfuls, place a scoop of each mixture onto the parchment lined baking sheet, about 1 inch apart.
Press down on each to flatten as much as possible.
Bake for 20-25 minutes until edges are browned.
Allow the crisps to cool slightly before removing them from the parchment.


I rate everything I bake on a scale of 1-4 with 4 being the best and this is the first time there has been dissension in the ranks at the 365 household over a rating.
I was the odd man out.
The four other family members agreed they should be given 3 rolling pins.
Mama here is thinking that is way too generous and they should be given a 2.
So, for all intents and purposes, I'll compromise and give them a 2 1/2.
I just thought they were kind of blah.  Nothing special, and while I like rosemary as a seasoning, I really didn't like it combined with the potatoes and pepper.
I don't know, maybe it's me.
Actually, come to think of it, it must be if I'm the only one who didn't like them.
They suggested serving them with a Rosemary Balsamic Cream Sauce, but to be honest, I started making dinner and then completely forgot.
You should try them together and tell me what you think.
Me, I'll stick with either the fried sweet potato chips that I make or the Southwestern Spiced Sweet Potato Fries with Chili-Cilantro Sour Cream.  Now THOSE were delicious!!  And EVERYONE agreed!
