Day 301 - Mustard Pecan Chicken

I received this recipe from mother.
Adapted from the cookbook Chicken Expressions by Normand Leclair.

Mustard Pecan Chicken - serves 4

4 boneless, skinless chicken breasts
1/4 cup yellow corn meal
1/4 cup Italian style bread crumbs
1 cup mayonnaise
2 teaspoons whole grain mustard
1/2 cup chopped pecans
2 teaspoons olive oil

Preheat oven to 425 degrees F.
Prepare a 9 x 13-inch baking dish by spraying it with cooking spray and adding the olive oil to coat the bottom.
In a small mixing bowl, combine mayonnaise and mustard and mix well; set aside.
In a flat dish, combine cornmeal and bread crumbs.  Mix well.
Dredge chicken breasts through crumb mixture being sure to coat both sides.



Place into prepared baking dish.



Spread mayonnaise mixture on each chicken breast.


Sprinkle pecans on top.


Bake for 20 minutes.


I rate everything I bake on a scale of 1-4 with 4 being the best and this Mustard Pecan Chicken earned 3 rolling pins.
The family liked it, but said that the mayonnaise mixture was too much.  I did put it on a little thick, next time it will be thinner.  Maybe I'll only be using 1/2 cup mayo. with 1 teaspoon of mustard.
I also had WAY too much chicken for our family.  We had one and a half chicken breasts left!
We really don't eat a lot.
Three pieces of chicken would have been more than enough.  With less mayo. mixture, of course.  ;-)

I have to tell you, as I looked at that 9 x 13-inch baking dish when I removed it from the oven tonight, I was SO happy!  It is such a relief to have an oven that's working!
We tend to take our luxuries such as hot water, running water, electricity, appliances and technology for granted and don't realize how much we truly depend on these things until we not longer have them.
I was humbled without my oven, but realized there are and have been many women before me who function or functioned without an oven.  God bless them!
I am extremely grateful for every piece of equipment that makes my life easier!!

  1. I totally understand the without an oven catastrophe. I had went through that in October. It made me sad and like you said, many women before us did it. How? I'll never know. This chicken looks really good and I appreciate the honest tips to make it even better. Hope your Golden and the whole fam. is doing great! Sadie says, "Ruff".---Geni
